What are the basics to a good vegetable soup?
i don't need recipes, just basic concepts on how to make a veggie soup. Like general common ingredients or practices when making a soup. for example, like the type of broth, how long to cook. Are onions and garlic sauted first? That type of thing. Thanks!
Answer:
vegetables, water, salt and pepper.
Cook until veggies are soft.
Not terribly complicated.
sautéeing first would be up to you. Try it both ways, and see which way you prefer.
I usually start with a can of vegetable drink, like V-8. A big one. Then throw in any veggies that were on sale any given week, and cook until I'm happy with it. It also makes a nice topper for macaroni or rice.
